Overhauling My Favorite Liberian Dishes: 3 Ways to Create Healthier African Cuisine

Africa is not only known for its rich culture and vibrant traditions but also for its flavorful and sumptuous cuisine. As a nutritionist with a deep love for Liberian food, I have embarked on a journey to balance my cultural cravings with my commitment to a healthy lifestyle. 1. Healthy Oil Substitutes


In Liberia, cooking often involves the use of seed oils like vegetable and palm oil. While these oils are staples back home, the health-conscious environment in America prompted me to seek out alternatives. Vegetable oil and palm oil, due to their high saturated fat content, are not in line with my health goals. To adapt, I have transitioned to using extra virgin olive oil in place of vegetable oil, especially when preparing traditional dishes. Additionally, rather than deep-frying meats which adds unnecessary calories and unhealthy fats, I opt to roast them, preserving the taste without compromising on nutrition.


2. Rice Moderation and Variations


Rice is a common accompaniment to many African dishes, including those from Liberia. However, consuming large portions of rice multiple times a day can lead to a significant calorie intake. Recognizing this, I have consciously reduced my rice consumption and made tweaks to enhance its nutritional value. To create a healthier alternative, I substitute white rice with nutrient-rich brown rice and occasionally cook my rice with bone broth for added flavor and nutrition. By moderating my rice intake and exploring diverse rice options, I continue to enjoy the essence of Liberian cuisine with a healthier twist.


3. Avoiding Harmful Seasonings


Many traditional African recipes call for seasoning cubes containing ingredients like MSG or other harmful chemicals. Recognizing the impact these additives can have on health, I have eliminated Maggi cubes and other seasonings that include such substances from my pantry. Instead, I have shifted towards using a blend of fresh herbs and spices to enhance the flavors in my dishes naturally. By prioritizing whole ingredients and avoiding processed additives, I not only elevate the nutritional profile of my meals but also ensure a healthier dining experience.


Through these simple yet impactful adjustments, I have successfully incorporated healthier practices into my preparation of traditional Liberian dishes without sacrificing the authenticity or taste.
